We adore soup formulas around here and this formula is something I simply kind of concocted one day. It's so natural and is a major hit with everybody in the family.
Right now Pot Mexican soup is so loaded with astounding flavor and the meat is so delicate. Nobody will see it's low carb.
It's the ideal soup for a bustling day and the weight cooker makes it considerably less complex. It is such a light soup and doesn't abandon you feeling so substantial.
For those not eating low carb or keto, this soup is great with tortilla chips or corn ships. So yummy!

- 2 lbs boneless skinless chicken breasts mine were frozen
- 2 cans of diced tomatoes 10 oz
- 2 cups of chicken broth
- 2 tablespoons of taco seasoning I used homemade taco seasoning
- 2 teaspoons of minced garlic
- 1/2 cup of onion chopped
- 1 green bell pepper chopped
- 1 red bell pepper chopped
Instructions
- Combine all the ingredients in the Instant Pot.
- Lock the lid on top and set the valve to sealing.
- Set the timer for 30 minutes.
- Do a quick release.
- Remove the chicken and shred.
- Return the chicken to the pot and Stir to combine the flavors.
